Root Veggies Mash #5fix

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 (24 ounce) packages simply potatoes traditional mashed potatoes
  • 1 lb celery root, peeled, cut into 3/4 inch cubes
  • 1 piece horseradish, 6-inch, peeled, coarsely grated
  • 1 1/2 cups sour cream
  • 1 (12 ounce) package chopped spinach, frozen okay, drained

Recipe

  • 1 place celery root & horseradish in a pot. add water to cover by 1”. bring to a boil, reduce heat to medium-high, and simmer until vegetables are tender, 20–25 minutes.
  • 2 drain, reserving 1/2 cup cooking liquid. return vegetables to pot; add sour cream. use a potato masher, coarsely mash vegetables.
  • 3 add simply potatoes® traditional mashed potatoes & reserved cooking liquid by tablespoonfuls if mash is too stiff.
  • 4 add chopped spinach and mix/stir 1 minute.
  • 5 (re)warm potatoes in the overn, adding more cooking liquid to moisten as needed.
  • 6 mound the mash in a bowl and serve.
