Root Vegetable Soup

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 2 tablespoons olive oil
  • 2 medium onions, diced
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 3 ribs celery, diced
  • 2 russet potatoes, diced
  • 2 red bliss potatoes, diced
  • 2 sweet potatoes, diced
  • 3 turnips, diced
  • 32 ounces vegetable stock
  • 32 ounces water
  • 3 bay leaves
  • 1/2 teaspoon ground cumin
  • salt and pepper

Recipe

  • 1 heat olive oil in large stock pot.
  • 2 saute onions until translucent.
  • 3 add each vegetable one at a time in order (chop and drop).
  • 4 add stock and bay leaves.
  • 5 simmer 30 min until vegetables soft.
  • 6 add water, cumin, salt and pepper to taste.
