Root Vegetable Soup

Ingredients

- 2 tablespoons olive oil
- 2 medium onions, diced
- 2 cloves garlic, minced
- 3 carrots, diced
- 3 ribs celery, diced
- 2 russet potatoes, diced
- 2 red bliss potatoes, diced
- 2 sweet potatoes, diced
- 3 turnips, diced
- 32 ounces vegetable stock
- 32 ounces water
- 3 bay leaves
- 1/2 teaspoon ground cumin
- salt and pepper
Recipe
- 1 heat olive oil in large stock pot.
- 2 saute onions until translucent.
- 3 add each vegetable one at a time in order (chop and drop).
- 4 add stock and bay leaves.
- 5 simmer 30 min until vegetables soft.
- 6 add water, cumin, salt and pepper to taste.
