Roasted Yam Halves (martha Stewart)

Total Time: 1 hr Preparation Time: 5 mins Cook Time: 55 mins

Ingredients

  • Servings: 4
  • 2 yams or 2 sweet potatoes, about 1 lb. each
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh thyme, finely chopped
  • coarse salt, to taste
  • fresh ground black pepper, to taste

Recipe

  • 1 preheat oven to 400 degrees f.
  • 2 halve the yams and place them, cut side up, in a shallow baking dish large enough to hold them in a single layer.
  • 3 drizzle with oil and sprinkle with thyme.
  • 4 season with salt and pepper.
  • 5 bake until golden brown and very tender, 35-45 minutes.
