Roasted Red Potatoes With Lemon

Total Time: 1 hr 30 mins Preparation Time: 15 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 6
  • 3 lbs red potatoes, quartered
  • salt
  • ground pepper
  • 1/4 cup unsalted butter
  • 1/4 cup extra virgin olive oil
  • 6 tablespoons fresh lemon juice
  • 2 teaspoons dried thyme
  • 1 tablespoon lemon peel, grated
  • 3 tablespoons parsley, minced

Recipe

  • 1 preheat the over to 375 degrees.
  • 2 butter a large shallow oven-proof casserole dish.
  • 3 add the potatoes and season generously with the salt and pepper.
  • 4 melt the butter with oil in a heavy saucepan over medium heat.
  • 5 add lemon juice, then pour over potatoes and toss well.
  • 6 sprinkle with thyme.
  • 7 bake for 1 hour.
  • 8 add lemon peel and toss to coat.
  • 9 continue baking until potatoes are tender and golden brown, about 15 minutes.
  • 10 sprinkle potatoes with minced parsley and serve.
