Roasted Red Potatoes With Lemon

Ingredients

- 3 lbs red potatoes, quartered
- salt
- ground pepper
- 1/4 cup unsalted butter
- 1/4 cup extra virgin olive oil
- 6 tablespoons fresh lemon juice
- 2 teaspoons dried thyme
- 1 tablespoon lemon peel, grated
- 3 tablespoons parsley, minced
Recipe
- 1 preheat the over to 375 degrees.
- 2 butter a large shallow oven-proof casserole dish.
- 3 add the potatoes and season generously with the salt and pepper.
- 4 melt the butter with oil in a heavy saucepan over medium heat.
- 5 add lemon juice, then pour over potatoes and toss well.
- 6 sprinkle with thyme.
- 7 bake for 1 hour.
- 8 add lemon peel and toss to coat.
- 9 continue baking until potatoes are tender and golden brown, about 15 minutes.
- 10 sprinkle potatoes with minced parsley and serve.
