Seedy Rolls

Ingredients
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup cracked wheat
- 1 teaspoon salt
- 1 cup sunflower seeds
- 2 tablespoons sesame seeds
- 1/4 cup packed brown sugar
- 1 (8 g) package instant yeast
- 1 1/3 cups water
- 1/4 cup cooking oil
- 1 1/4 cups all-purpose flour, approximately
- 1 large egg
- 1 tablespoon water
- 1 tablespoon sunflower seeds
- 1 teaspoon sesame seeds
- 1 teaspoon poppy seed
- 2 teaspoons cracked wheat
Recipe
- 1 stir first 8 ingredients together in large bowl.
- 2 add warm water and cooking oil.
- 3 mix.
- 4 work in enough remaining flour until dough pulls away from sides of bowl.
- 5 turn out onto floured surface.
- 6 knead about 4 minutes.
- 7 place in greased bowl, turning once to grease top.
- 8 cover with tea towel.
- 9 let stand in oven with light on and door closed for about 1 1/2 hours until doubled in bulk.
- 10 punch dough down.
- 11 cut dough into egg-sized pieces.
- 12 shape into buns.
- 13 set aside momemtarily.
- 14 topping:beat egg and water with fork in small bowl.
- 15 stir next 4 ingredients together in another bowl.
- 16 brush top of each bun with egg wash, dip in seeds and arrange on greased baking sheet at least 1 inch apart.
- 17 cover with tea towel.
- 18 let stand in oven with light on and door closed for about 45 minutes until doubled in size.
- 19 bake in 375 degree oven for about 20 minutes.
- 20 turn out onto racks to cool.
