Fried Green Tomatoes

Ingredients
- Servings: 4
- 4 large green tomatoes, sliced thick (or ripe tomatoes)
- 1/4 cup self-rising flour
- 1 tablespoon cornmeal
- 1/4 teaspoon sugar
- 1 dash cayenne
- 1/2 teaspoon dried herbs (of your choice)
- 1/2 cup soymilk
- 2 tablespoons oil
- salt and pepper
Recipe
- 1 mix flour, cornmeal, sugar, cayenne, and herbs.
- 2 dampen tomato slices with soymilk.
- 3 coat with flour mixture.
- 4 heat oil to medium in a heavy, nonstick frying pan.
- 5 fry tomatoes, turning once or twice, until golden brown.
- 6 remove tomatoes to serving platter.
- 7 sprinkle with salt and pepper.
- 8 to bits of browned flour in pan, add 1/2 cup milk.
- 9 cook and stir until a gravy is formed.
- 10 pour over tomatoes.
- 11 serve immediately.
