Pistachio Brittle

Ingredients
- 1 1/2 cups shelled pistachios
- 1 cup sugar
- 1/2 cup light corn syrup
- 1/8 teaspoon salt
- 1 tablespoon vegan hard margarine
- 1 teaspoon vanilla extract
Recipe
- 1 in microwave safe bowl, combine pistachios, sugar, corn syrup and salt. stir until well combined.
- 2 microwave on high until mixture is bubbly and nuts are starting to darken, 6-7 minutes.
- 3 stir in margarine and vanilla and microwave until mixture is turning a pale golden color, 2-3 minutes.
- 4 using oiled spatula, spread onto prepared baking sheet. let cool completely.
- 5 break into pieces and store in an airtight container.
