Pistachio Brittle

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 1/2 cups shelled pistachios
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 tablespoon vegan hard margarine
  • 1 teaspoon vanilla extract

Recipe

  • 1 in microwave safe bowl, combine pistachios, sugar, corn syrup and salt. stir until well combined.
  • 2 microwave on high until mixture is bubbly and nuts are starting to darken, 6-7 minutes.
  • 3 stir in margarine and vanilla and microwave until mixture is turning a pale golden color, 2-3 minutes.
  • 4 using oiled spatula, spread onto prepared baking sheet. let cool completely.
  • 5 break into pieces and store in an airtight container.
