Roasted Root Vegetables

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 5 medium red potatoes, cubed
  • 4 medium carrots, cut into 1/2-inch slices
  • 1 garlic clove, minced
  • 2 -4 tablespoons olive oil
  • 1 teaspoon rosemary, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 place potatoes, carrots and garlic in a greased 9 by 13-inch baking dish.
  • 2 drizzle with oil; sprinkle with rosemary, salt and pepper.
  • 3 stir to coat.
  • 4 bake, uncovered, at 350f for 35 minutes.
  • 5 increase heat to 450f; bake 10-15 minutes longer or until vegetables are tender.
