Ingredients

- 5 medium red potatoes, cubed
- 4 medium carrots, cut into 1/2-inch slices
- 1 garlic clove, minced
- 2 -4 tablespoons olive oil
- 1 teaspoon rosemary, crushed
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 place potatoes, carrots and garlic in a greased 9 by 13-inch baking dish.
- 2 drizzle with oil; sprinkle with rosemary, salt and pepper.
- 3 stir to coat.
- 4 bake, uncovered, at 350f for 35 minutes.
- 5 increase heat to 450f; bake 10-15 minutes longer or until vegetables are tender.
