Instant Fruit Sorbet

Ingredients

  • Servings: 4
  • 3 peaches, ripe but firm (peeled, pitted and sliced,about 2 cups)
  • 1/2 cup raspberries
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 strip lemon rind

Recipe

  • 1 freeze peach slices and raspberries in a single layer for at least 2 hours or until solid. store in freezer bags or air-tight containers.
  • 2 simple syrup: in a small saucepan, bring sugar and water and lemon rind to a boil, stirring to dissolve sugar. boil for 1 minute. let cool completely and remove rind.
  • 3 in a food processor, process frozen fruit, pouring syrup in slowly, until smooth, 2-3 minutes.
  • 4 serve immediately, or store in freezer.
